Snack company Fermenti had to have SALSA certification to be able to market their product with major health retailer, where within short time the audit was successfully passed.
Client Overview Project Objectives
Fermenti, a growing snack business based in London, sought assistance in implementing the SALSA (Safe and Local Supplier Approval) standard. As the demand for their products grew, they realised the importance of enhancing their food safety and quality management systems to meet industry standards and expand their market presence. The SALSA scheme, suitable for smaller food producers and suppliers in the UK, became the focus. The project’s objective was to implement four key elements outlined in the standard: Prerequisite Controls, HACCP (Hazard Analysis and Critical Control Point), Management Systems and Documentation, and Premises, Layout, and Structure.
Our Method Approach and Challenges
The initial step was to conduct a gap assessment to identify existing practices and areas needing improvement. Following this assessment, the SALSA Checklist served as the report and foundation for the implementation plan. The plan outlined clear activities and priorities to streamline the project’s progress. Collaboration with the client was crucial and proved immensely helpful throughout all stages. Effective communication and mutual understanding significantly contributed to a positive cultural shift by promptly addressing issues, implementing necessary controls and records, and moving toward the project’s goal. Challenges included relocating premises, limited resources during holiday periods, and a tight deadline.

Despite the challenges, an agile approach was adopted to drive the project forward. The SALSA audit was conducted smoothly, resulting in a successful outcome with only a few non-conformances identified. This achievement demonstrated flexibility and dedication to the client’s needs, ultimately leading to a successful implementation and recognition by the auditor.
